Fenugreek (Trigonella foenum-graecum) is an ancient bean-family spice used since at least 4000 BCE. Its flavor is bittersweet, warm, and musty, defined by sotolon, which gives a distinctive maple-syrup or caramel aroma, alongside woody and buttery notes. The seeds also contain galactomannan, allowing them to thicken sauces and bind flavors when soaked or simmered. Widely used across Ethiopia, South Asia, and the Caucasus, fenugreek is central to blends such as niter kibbeh, panch phoran, vindaloo, and khmeli-suneli. Light toasting tempers bitterness and adds nutty depth, making fenugreek a grounding, structural spice in complex dishes.
