Star anise (Illicium verum) is a star-shaped spice cultivated for over 3,000 years in China and Vietnam, valued for its sweet, liquorice-like warmth. Its dominant compound, anethole, is intensely aromatic and naturally sweet, supported by floral and eucalyptus-like notes from linalool and cineole. Historically traded along the tea route into Central Asia and Russia, it became integral to East and Southeast Asian cuisines. Today it is essential in Chinese five-spice, Vietnamese pho, and slow-braised meats, and also pairs well with fruits. The flavor releases best when whole pods are gently simmered in fat-rich or alcoholic liquids.
